Uganda Marine Products Ltd. produces the following range of Nile Perch (Lates Niloticus) and Tilapia (Oreochromis Niloticus) products in both fresh and frozen forms:

  • Skinless fillets
  • Skin-on fillets
  • Headless gutted (H&G)
  • Whole gutted
  • Portions of different sizes and shapes
SPECIFICATIONS:
  • Yield: 33 - 49% according to customer trimming specifications for fillets.
  • Yield: 60 - 90% for Headless and Gutted and Whole Gutted.
  • Pin-Bone: IN or OUT as per customer's specifications.
  • Kosher: Fillets with a small patch of skin, as per customer's specification.
  • Temperature: -3ºc for Fresh Products and -18ºc for Frozen Products.
  • Packing: Styrofoam boxes for Fresh Products and Waxed Carton boxes for Frozen Products.
  • Labeling: As required by the customer.
  • Transport: by air/sea (via Mombasa).
CHILLING PROCESS
Chilling to required temperatures is achieved using chillers, and a cold chain is maintained throughout the production line. Product temperature is kept at < - 4º C during production. Final product temperature is maintained at -3º C (± 0.5º C) depending on customers' instructions.

FREEZING PROCESS
Freezing to required temperatures is achieved using a plate freezer. Targeted temperature after freezing is <-18º C.

STORAGE BEFORE DISPATCH
Fresh Products: Chilled rooms at a temperature of -10ºc.
Frozen Products: Cold rooms at a temperature of -20ºc.
Electronic temperature instruments continuously monitor the temperature of the chilled rooms and cold rooms.
